Green leaf lettuce, braised with French butter, shallots and morels
This is an adaptation of this recipe using different vegetables (morels and shallots instead of baby squash, young onions and peas). The technique is the same, however. The amount of butter is higher in this version than in the original because I omitted the olive oil. Note that the “gluten-free” tag doesn’t appear here due to the presence of 3 tablespoons Belgian beer.
As pictured, this is sized for one person and makes an elegant appetizer or side dish.
