Simple Kitchen Seasons

Salad Snapshot

I’m working on a post that talks about being “normal”. A little food for thought, maybe, especially this month when we celebrate what it means to be proud.

In the meantime, here’s part of what was for dinner last night:

Baby mesclun salad, with smoked shoulder bacon, edible flowers and Japanese turnips

Like so much of my cooking, there isn’t really a recipe for this. It was just something I threw together at the last minute.

The turnips were simmered in lightly salted water, then sautéed with the bacon, a tablespoon of unsalted butter and a couple of tablespoons of Marsala wine. Then I combined that mixture with some salad greens and stirred in some vinaigrette (1 tablespoon white wine vinegar, 2 tablespoons Belgian-style beer, 3 tablespoons extra-virgin olive oil, sea salt and black pepper). If you don’t have any Belgian beer, a nice India pale ale or micro-brew might go well. I like Ommegang Hennepin for the notes of spice and citrus that pair it well with pork and seafood.
